Ultra-Orange Cake

This recipe comes from the Joy of Cooking.  It produces a moist, tasty, vegan cake, without being overwhelmingly orange.  The best thing about this cake is that it is made with ingredients that are stocked in your pantry--no trip to the grocery store required!

Ultra-Orange Cake 
Preheat the oven to 350F.  Grease and flour one 8 x 8-inch pan or line the bottom with wax or parchment paper.

Wisk thoroughly in a large bowl:
-1 ½ cups all-purpose flour
-1 cup sugar
-1 teaspoon baking soda
-½ teaspoon salt

Add and stir together until smooth:
-1 cup orange juice
-1/3 cup vegetable oil
-1 tablespoon grated orange zest (I find that lemon zest makes a great substitute)
-1 tablespoon white or cider vinegar
-1 teaspoon vanilla

Scrape the batter into the pan and spread evenly.  Bake until a toothpick inserted into the center comes out clean, 30 to 35 minutes.  Let cool in the pan on a rack for 10 minutes.  Slide a thin knife around the cake to detach it from the pan.  Invert the cake and peel off the paper liner, if using.  Let cool right side up on the rack. 

I finished mine off with a dusting of powdered sugar.  Enjoy!

  1. This cake is amazing, thank you for sharing!! I found this on Pinterest and am now making it for a second time. I'm so happy to have found a dairy free dessert that doesn't call for a bunch of hard to find substitutes!
