Think you cannot make recipes that call for evaporated milk because there isn't a dairy free alternative? Think again!
In order to make dairy free recipes with with this concentrated milk substance, you must create it yourself, as there are no commercial options. Luckily, this is a very simple process that only requires one ingredient: soy milk!
Dairy Free Evaporated Milk
-Dairy free milk (I use soy and have only tried this with soy)
In a sauce pan, add soy milk in twice the amount that the recipe
calls for evaporated milk. For instance, if a recipe calls
for 1/2 cup evaporated milk, you would use 1 cup soy milk.
Bring the milk to just a boil and stir constantly until it has reduced
to half of its amount, about 5-8 minutes (depending on the amount of
milk).
If you are unsure if the milk has reduced to the necessary measurement,
pour it into a glass measure and then pour it back into the pot to
continue to cook down if it is not sufficient.
And there you have it...your own dairy free evaporated milk! This dairy free alternative can be substituted in any recipe that calls for evaporated milk. Try it in a pumpkin pie or my Dairy Free Fudge. Enjoy!

We can't have soy, but I bet this would work with hemp, rice, or almond milk. Can't wait to try!
ReplyDeleteMy 3-year-old son had severe eczema until he was diagnosed with food allergies a few months back. I have a blog that shares our family’s battles with eczema, allergies, and asthma (yes, lucky guy has that too).
I think the key is to learn from one another, so the more information out there to the masses, the better. With this in mind I’ve started a blog hop for anyone dealing with food allergies, eczema, or asthma, either for themselves or as a caregiver. If you’re interested in joining, please add a comment. I’d love to welcome you to the group. http://itchylittleworld.wordpress.com/blog-hop/
Thanks.
