Chocolate Cake in a Mug

Going off to college is hard.  Going off to college with a food allergy is even harder.  There is only so much you can eat at the dining hall and it's nearly impossible to cook a real meal in a dorm room.  Thankfully, there are a handful of great dairy (and other allergens) free recipes that you can make in your microwave!
Chocolate Cake in a Mug
-1 egg
-3 tablespoons soy milk
-3 tablespoons vegetable oil
-dash of vanilla (if you have it on hand)
-1/4 cup flour (you can opt for a gluten free option if you are also gluten intolerant)
-6 tablespoons sugar
-2 tablespoons cocoa powder
-dash of salt

In a large coffee mug (or two small ones), whisk the egg, soy milk, vegetable oil, and vanilla (optional) with a fork.  Once combined add the flour, sugar, cocoa powder, and salt.

Place the mug in a microwave for 2 minutes and 30 seconds, watching closely.  Serve immediately; by itself or with a scoop of your favorite dairy free ice cream.

This cake is great for those times when you are looking for an instant chocolate or "home-y" fix.  It does not make a single dish besides the mug...how great and dorm-friendly is that?  Enjoy!
